'North and South' was made as a response to the apple crop failure across the Black Isle in 2019. The Caledonian Cider Co responded by blending various unknown donated garden apples (grown locally in the Highlands) sparkling cider with keeved Somerset cider made from James Grieve and Katie varieties.
The result is a medium dry cider full juice cider , with peachy fruit and wonderful tannins, that is both refreshing and food friendly.
About Caledonian Cider Co:
Caledonian Cider Co is a small, independent cidery founded in 2014 in Conon Bridge, on the Black Isle, just North of Inverness and their cider apple orchards are among the most northerly in Europe . The company makes use of all types of apples grown locally: from sharp 'cookers', juicy 'eaters' or bitter wee cider apples, they find a use for all of them. Their aim is to reflect as much as possible their Highland terroir, which in cidermaking terms, remains a largely uncharted territory.
Caledonian Cider Co only ever ferment freshly pressed juice using wild yeast found naturally on the apples and in the cidery itself, with both fermentation and maturation taking place in oak barrels at ambient temperature. This ensures a cold, slow fermentation which tracks the natural weather fluctuations: it’s not uncommon during the depths of winter for the juice to freeze solid for a few days at a time in the cidery. Every vintage brings it’s own unique character.
The barrels are then blended by taste to produce individual ciders or are set aside for one of our single cask bottlings.
Each cider contains only apples therefore they are all Gluten-free, suitable for vegans and have no added sulphites. For more beer visit the beer section of our website.
