Top quality cheese begins with top quality raw milk. St Andrew's Cheese Company use their own milk, produced by their home bred herd of Friesian Holstein cows which contentedly graze all summer long amongst the lush pastures overlooking the Firth of Forth in our beautiful corner of the East Neuk of Fife.
A delicate, pale, crumbly cheese – reminiscent of Caerphilly.
The flavour is mild, yet complex with a touch of citrus on the finish and cellar- ish, almost mushroomy, notes next to the natural rind. Typically aged for 2 – 4 months.
