Chicken, Bacon & Avocado Chopped Salad is the perfect summer salad full of lean high protein chicken and egg, topped off with fresh healthy veg. This salad can be chopped up and prepared quickly using ingredients readily available in your fridge.
Ingredients:
- 2 skinless cooked chicken breasts, cut into chunks
- 4 pieces of cooked bacon, cut into strips
- 2 eggs, hard-boiled, peeled + chopped
- 25g blue cheese of your choice, crumbled
- 1 avocado, peeled, stoned, and cut into chunks
- 16 cherry tomatoes, halved
- 1/2 cucumber, cut into chunks
- 12 radishes, quartered
- 1 lettuce, chopped
- 1/2 red onion, finely diced
Dressing:
- ½ clove garlic, crushed
- 1 tsp Dijon mustard
- 2 tbsp Apple Cider Vinegar
- ½ tsp caster sugar
- 4 tbsp olive oil
- Salt and pepper to taste
Mix up your dressing to change up your salad and compliment different ingredients. Try adding runny honey instead of caster sugar, add lemon juice or another citrus for extra freshness, and why not use different oils as the base of your dressing. We love adding some sun-dried tomatoes to our salad and then using the oil for an extra depth of flavour in the dressing.
Method:
- Put the dressing ingredients in a small jar, and shake vigorously
- Put the remaining ingredients on a large platter, drizzle over the dressing and gently toss together.
- Serve with warm, crusty bread.
Switch out or add in any veg, croutons or salad leaves you to have in your fridge!
