Chicken, Bacon & Avocado Chopped Salad is the perfect summer salad full of lean high protein chicken and egg, topped off with fresh healthy veg. This salad can be chopped up and prepared quickly using ingredients readily available in your fridge.
Mix up your dressing to change up your salad and compliment different ingredients. Try adding runny honey instead of caster sugar, add lemon juice or another citrus for extra freshness, and why not use different oils as the base of your dressing. We love adding some sun-dried tomatoes to our salad and then using the oil for an extra depth of flavour in the dressing.
Put the dressing ingredients in a small jar, and shake vigorously
Put the remaining ingredients on a large platter, drizzle over the dressing and gently toss together.
Serve with warm, crusty bread.
